Wine Concentrates for Food and Beverage Applications
Breko is Your Trusted Supplier of Wine Concentrates
Wine is often used in cooking to add aroma and flavor, provide acidity and body, and enhance the color of dishes. It is also a popular ingredient in the preparation of sauces for meat dishes and for marinades.
Our wine concentrates are made from French red and white wines through dealcoholization and vacuum concentration. They offer a more flavor-intense alternative to wine for use in the food industry.
Premium Products Precisely Manufactured
The wine concentrates are made from French and Spanish red and white wines. During production, the wines are first gently rectified under vacuum, a process that removes the alcohol from the wine. The resulting alcohol-free wine is then further concentrated under vacuum through water removal. This creates a flavor-intense alternative to liquid wine.
If additional flavor notes (volatile aroma compounds) are desired, they can be reintroduced using our grape variety-specific wine aromas.
These concentrates may also be referred to as wine extracts.
Sustainable Manufacturing Process
The wine concentrates are produced by our partner, a wine cooperative in Southern France, as part of a sustainable circular economy.
By-products generated during grape processing and winemaking are either upcycled into high-quality ingredients or returned to the vineyards as compost. Process water is treated in open pond systems and reused for irrigating the vines.
The production facility is located close to the vineyards – with a maximum distance of just 80 km between vineyard and plant. These short transport routes help reduce CO₂ emissions.
Wine Concentrates for the Food Industry
Typical applications for wine concentrates include their use as ingredients in products such as soups, sauces, ready meals, and marinades to enhance flavor.
In addition to their flavor-enhancing properties, the concentrates can also be used as natural colorants in the dairy (yogurt/dessert), ice cream, beverage, chocolate, and confectionery industries to intensify color.
