Wine Powders for Food and Beverage Applications
Breko is Your Trusted Supplier of Wine Powders
Wine is one of the oldest seasoning ingredients in the world and enjoys an excellent reputation.
In cooking, wine adds aroma and flavor, provides acidity and body to dishes, and contributes to coloring. It is also commonly used in the preparation of sauces and marinades.
Our wine powders are produced from red and white wines through dealcoholization and vacuum concentration, followed by spray drying. They offer a more intense flavor and a dry alternative to liquid wine for the food industry – especially for powdered products. Our wine powders can also be referred to as wine extracts.
Premium Products Precisely Manufactured
The wine powders are made from French and Italian red and white wines.
The wines are first gently rectified under vacuum, a process in which the alcohol naturally present in the wine is removed. The resulting alcohol-free wine is then further concentrated by removing water under vacuum and finally spray-dried, with or without maltodextrin. The result is a flavorful, powdered, and alcohol-free alternative to liquid wine.
Sustainable Manufacturing Process
One of the most significant trends in the food industry in recent years has been the use of natural ingredients. As a supplier of natural wine and grape-based ingredients, Breko offers its customers a wide range of opportunities for developing new natural products.
Our wine powders are produced by our partner, a wine cooperative in southern France, as part of a sustainable circular economy.
By-products generated during grape processing and wine production are either upcycled into high-quality ingredients or returned to the vineyards as compost. Process water is treated in open pond systems and reused for irrigating the vines.
The production facility is located close to the vineyards – the maximum distance between vineyard and facility is 80 km – helping to reduce CO₂ emissions through shorter transportation routes.
Wine Powders as a Natural Ingredient for Food Products
Our wine powders are commonly used in instant products such as seasoning blends, ready-made sauces, and other convenience foods. They are also used in processed meats and confectionery products to enhance flavor.
In addition to their flavoring properties, the powders can also serve as a natural coloring ingredient in dairy products (such as yogurt or desserts), ice cream, beverages, chocolate, and confectionery to intensify color.
